Tip/Tidbit: Try this simple recipe.
Brown 1-2 lbs. ground meat; drain. I usually throw in a handful of onion mix and let the onions cook along with the meat.
Add 1 can each: Rotel (drained), cream of chicken soup, and ranch style beans.
Spray a baking pan and pour into it about ½ of a family size bag of regular flavor (cheesy) Doritos. Lightly crush them just enough that the points don’t stick out of your meat mixture.
Pour the meat mixture over the chips.
Cover the casserole with a thick layer of grated cheddar cheese (any cheese blend that includes cheddar is fine: Mexican, fiesta, cheddar/jack…). I buy large bags of cheese and just dump a lot on top. I like more than an 8 oz. bag. 12-16 oz. probably suits our family best.
Bake at 350* until cheese melts and sides bubble. Time usually depends on how hot your meat mixture is when you put it over the chips. If you go from stove to oven, you only need a few minutes to melt the cheese. If the meat mixture has cooled or if you put the casserole together ahead of time, plan for 20-30 minutes of cook time.
Garnish with a dollop of sour cream and extra Doritos; black olives are good sprinkled on it as well.
Dish it up with the above-mentioned sides, and you have a FILLING meal.
